Fudge

I wanted to make something sweet for a friend that moved to NY as a house warming. It's too bad he didn't stay in California - he would have a regular supply of them. I did half turtle and half m&m for fun. I'm thinking about shipping them in a peanut butter jar with a custom label. Don't you wish you were my friend??

IT'S A MONSTER!

Monster Cookies!

These cookies are called monsters because they are huge for one:



And second, they contain a monster array of goodies: peanut butter, oatmeal, chocolate chips, m&m's, and raisins.



You have to be careful not to over bake because they can get crumbly and dry if you do. Ziploc bags also help retain the cookie's softness.

Oatmeal Chocolate Chip

They aren't much to look at, but they're delicious! I had a friend coming over to watch Avatar with and I wanted to bake. So I asked him what his favorite cookie was and he said Oatmeal Chocolate Chip. I found the recipe on BettyCrocker.com. Betty is tried and true! He said they were the best and I agree.

Getting Lazy

I haven't been taking pictures!

I keep forgetting to stop and take a couple of quick snaps of the cakes I've made recently. For a potluck at work I made my first pineapple upside down cake. Oh wow was this sweet. I got the recipe from TLC. You basically make caramel by melting butter and brown sugar in a pot and letting it boil. Once boiling you take it off the heat and pour it into your cake pan. Either tap in your crushed pineapple or place your rounds and then pour over top your yellow butter cake batter then bake. Voila! People were talking about that cake for days.

The next cake I made was for a friend's birthday. All he wanted was a basic chocolate cake with chocolate frosting. Of course that was easy peasy! NOT! I ended up trying to rush the cake last minute because I had an appointment to go to. Bad Jenny! I made a devil's food cake from Betty Crocker's "New" Cookbook. I used a tip from Martha Stewart and wrapped the cake pans in dampened CLEAN dish towels. They were baking just fine, but I had to leave with 27 minutes still left on the timer. I had to shut the oven off. When I got back, I turned it back on and cooked the cakes for the remaining amount of time. The cakes were nice and flat on top; however, partially dried out. I made Betty's browned butter cream chocolate frosting and lathered it up good. He said it was the best birthday cake ever. I said it was too crumbly and dry. Oh well sometimes we have to accept less than perfection. It made my friend very happy and that was the point, right?

Whoa! Super Gooey Turtle Brownies

These turned out a lot more gooey than I thought they would. You have to eat them with a spoon. Deliciously sweet. Super Yum!

Leftovers - Carrot Cheesecake Bran Bites

I had left over filling from a carrot cheesecake and I really needed to use it up. I love cream cheese in a bran muffin. So why not put my left over filling in some? It's all cream cheese anyway. So it's kind of healthy, kind of not.
